working 6-6 for the next few weeks

my hubby works extremely hard, uses BIG tools and gets REALLY filthy

BIG-O nuts and bolts                           BIG BERTHA, now THAT’S one big air wrench!

Oil refineries

So, every morning I make him a HEARTY breakfast YES, EVERY MORNING! and I’m not talkin’ about a poptart and milk, I’m making breakfast burritos, ham and eggs, baked grits and turkey sausage, etc.! Then I prepare a lunch that the other workers will swoon YES SWOON! over.

This manly man doesn’t take samwiches and Cheetos but

yumalicious

lunches like chicken pot pie, baked pastas, fajitas, etc.

granted, some of these are from the previous night but hey, sometimes things get better with time

like cheese, fine wine and ME

So, today I COOKED. I don’t usually share my recipes but this one is too good and too easy to keep to myself.

MiNi HaM & ChEeSe PiEs!

Now these are no ORDINARY pies…

When I took them to teachers’ luncheons, they would be out in the parking lot with binoculars preparing for the attack when I drove in.

NO KIDDING!

Ingredients:

2 unbaked pie crusts

2 cups cubed ham, sautéed enough to get the water out

2 cups cubed CoJack Cheese

2 Tablespoons chopped green pepper

3 Tablespoons Parmesan cheese

2 beaten eggs

dash of Tabasco, to taste

dash of pepper, to taste

(You can add chopped onion, green onion, mushrooms, etc)

Instructions:

Mix all ingredients together except the crusts.

IMG_8481

Cut 2½” circles from the crusts

IMG_8483

Push crust circles into mini-muffin tin.

(I spray mine lightly with canola oil)

Fill with cheese mixture.

IMG_8491

Bake for 20 minutes at 350° or until cheese is melted and crust is golden brown.

Let them cool for a few minutes.

Slide thin knife around the edges to loosen before removing them from the pan.

Serve warm. Makes 18 pies

for all you sweetsaholics out there, here’s another filling

shhhhhhh I got this from my favorite TV cook, Paula Deen

Pecan Tassies

½ stick of butter, melted
1 cup firmly packed brown sugar
2 tablespoons all-purpose flour
2 large eggs, lightly beaten
1 ½ teaspoons vanilla extract
1 cup finely chopped pecans

10-ounces Heath toffee bits (sold in 8 oz. packages)

Bake the same as Mini Pies.

This is a party favorite!

Enjoy!

YUM...I like the mini cheese/egg/ham pies. Gotta try that. My favorite mini-food? Mini Haagen-Daz bars! You didn't say it had to be homemade!!

Kathy – You are going to have to stop posting those recipes right now. I have enough trouble walking off goodies. Of course, I have already told Ellen that we NEED to try this one (MiNi HaM & ChEeSe PiEs). Thanks for sharing!

I just licked across my computer screen, but didn't taste anything. Everyone else must have beaten me to it.

Your hubby is a lucky guy. And you know what? I bet he doesn't have any work friends. I wouldn't be his friend either because I'm sure with food like that, he doesn't share.

I must admit, both of those recipes look very good. I wonder if you could double the one with ham and eggs. I think it would be great for a breakfast pot luck. Thanks for sharing and I think your site is very interesting.

Kathy, Thanks for coming by and leaving comments at A Camp Host's Meanderings. Appreciated! I love your recipes. Can't wait to try them! You are one devoted woman to your man - getting up and cooking breakfast and making a lunch! He is hardworking and deserves it. Take care and be safe...

Glad to see there are still women out there who actually "cook" for their husbands!

wow Kathy, you are the woman! Cooking that large breakfast every day for your hubby! Oh my you put me to shame! I am going to use this recipe for sure. It looks so good!

One of our families favorite mini food is Bacon Wrapped mini Sausages. You use the little sausages and wrap a piece of bacon around each one and use a toothpick to hold together. Then you put them all in a 9x 13 baking pan and poor brown sugar over them. (cover them until you cannot see any sausages. You bake at 350 for around 30 minutes or until the brown sugar is all disolved and bubbly. Take them out and serve. Really they are wonderful!

Hi Gal! Your man is so blessed to have a woman like you! I am always up early with my man, too! There is just something about starting my day with him that we both love. I iron his clothes for each day, and usually make oatmeal...his choice! I would rather make so many other things!

I have had pecan tassies and love them, but haven't done the ham and cheese thing! I think my whole fam would love them!

Have a fantastic weekend!
